5. There’s still time to bake your cake!

It’s not too late to bake a traditional Christmas cake this year.

A rich, soft, velvet-like texture packed with dried fruit makes a wonderful cake, delicious eaten just as it is.

Avoid baking a brick or limiting your flavours with my top tips for baking a brilliant Christmas cake:

1. Try out different dried fruits if you don’t like the traditional flavours. You could use dried cherries, figs, cranberries or apricots instead.

2. Soak your fruit at least overnight before baking your cake.

3. Add a grated carrot to the cake mixture to keep the final cake moist.

4. Wrap your cake tin in a double layer of brown paper during baking, to help your cake bake evenly.

5. Store your cake tightly wrapped in baking paper plus an outer layer of foil, in an airtight container.
