Swop Water for Milk – That’s It!

Yes, really. The easiest way to bake softer, more fluffy bread at home is to swop the water in your bread recipe for milk. 

This small change can transform your loaf’s texture, making it beautifully soft inside. 

And don’t worry, whatever milk you normally keep in your fridge will do the trick. You can even use non-dairy alternatives for this switch, though the softness may vary depending on the fat content of the milk you choose. 

The magic of using milk is in the additional fats and proteins found in the milk, which enrich the dough and soften the crumb (aka the inside of your loaf).

Why Milk Makes a Difference

Milk bring a little more to the table than water. Its natural fats help coat the proteins in the flour, which results in a softer, more tender crumb. The final result is a lighter, softer loaf, more along the lines of squishy sandwich bread or pillowy dinner rolls. 

Milk also contains a touch of natural sugar, which not only contributes to a slightly sweeter flavour, but also helps develop that warm golden-brown crust that we all love. 

Want to Go a Step Further? Add Butter!

If you love the sound of softer, fluffier bread as a result of the fats in the milk, here’s a bonus tip: add butter! 

You don’t need to add loads, about 30 grams for every 500 grams of bread flour. Cut your butter into small cubes and knead it into your bread dough. This will add even more richness and softness. 

This idea comes from enriched doughs like brioche, well known for its rich, mel-in-the-mouth texture thanks to generous amounts of butter and eggs. While we’re not going full brioche here, even a little butter gives your loaf a boost in both taste and texture. 

How to Use This Tip In Your Own Baking

Here’s how to apply this one simple change: 

  • Milk only. Just swop out some or all of the water in your recipe for milk. 
  • Milk + butter. Replace the water with milk and knead in 30g of butter for every 500g of bread flour. 
  • Butter only. If you prefer to stick with water, you can still knead in some butter, adjusting the liquid slightly to compensate. 

Either way, you’re adding richness and softness to your dough without complicating your baking process.
